Senior Culinary Operations Manager As a Senior Culinary Operations Manager, you will be responsible for leading a team of experienced chefs in the preparation and presentation of high-quality dishes. You will work closely with the Executive Chef to develop menus and ensure that all culinary standards are met. Job Responsibilities: - Supervise product delivery in the assigned Galley section, ensuring consistency by following recipes, maintaining adequate production quantities, executing correct methods, and ensuring presentation quality. - Control mise-en-place during preparation and conduct tastings to ensure recipe accuracy, production levels, and presentation standards. - Manage production schedules and Galley staffing, coordinating with other Sous Chefs and department heads. - Assist in food and beverage improvement strategies as directed by the Executive Chef or Food and Beverage Director. - Supervise Galley staff during operations, monitoring compliance with production and storage requirements. - Conduct daily staff briefings and ensure Chefs De Partie hold station briefings. - Observe staff performance and provide prompt feedback for correction, improvement, or reinforcement. - Adjust production levels based on guest demand and notify the Executive Chef of any discrepancies or changes. Requirements: - Formal qualification in the Culinary Arts from a recognized culinary training institution. - At least six years of experience in high-volume hotel or food service environments, preferably including cruise ship experience, with a minimum of two years as Sous Chef or higher. - Ability to adapt production methods to optimize cost efficiency. - Experience training and monitoring a multicultural staff. - Proficiency in MS Office and relevant computer software. - Fluency in English, both written and spoken. - Understanding of guest service fundamentals and a commitment to delivering outstanding service. - Motivated to excel in all job responsibilities. - Excellent communication skills with a warm, friendly, and caring demeanor. - Passion for surprising and delighting guests throughout their cruise experience. - Ability to foster professional and courteous relationships in a diverse cultural environment.
