Job Description This role involves heading the team of cooks responsible for food production daily in the main kitchen, specializing in Latin American Cuisine. Responsible To: Executive Chef Responsible For: Kitchen/Food Stores Duties and Responsibilities Oversee daily food production operations. Schedule managers to ensure proper coverage. Review staff schedules weekly for coverage and wage control. Maintain inventory levels and storage standards. Control payroll expenses within budget. Ensure adherence to standard operating procedures and company policies regarding cleanliness, uniforms, purchasing, stock rotation, safety, and hygiene. Develop and follow recipe cards and use records for all menu items. Monitor production charts to minimize waste and overproduction. Train staff on food standards, sanitation, hygiene, and cost control. Coordinate with restaurant managers for order expediting, menu counts, and training. Collaborate with marketing on tastings and promotions. Develop staff rotation and event planning for staff meals.
