About the role: The Steward manager ensures the proper use and preventive maintenance of machines and equipment, maintains inventory of kitchenware and utensils, ensures cleanliness of kitchens and equipment, and manages waste disposal. Responsibilities: Establish and verify that work roles are designed according to staff capabilities and skills. Verify the order and cleanliness of the area designated for storing chemicals. Open and close service shifts, verifying team attendance, punctuality, and completion of tasks, ensuring everything is properly stored and organized. Check cleanliness of all areas, refrigerators, and freezers, ensuring they are perfectly clean inside and out. Fulfill 100% of hygiene and cleaning programs in production kitchens and service areas. Maintain kitchens, storerooms, hallways, and areas in optimal cleanliness, order, and safety conditions. Keep kitchen equipment in optimal condition, including operational tools. Analyze, supervise, and control expenses per service center, not exceeding the budget. Ensure the availability of food and beverage operation equipment through monthly inventory counts, replenishing shortages, and planning annual purchases. Requirements: Degree in Food Engineering, Industrial Engineering, or similar fields. Minimum of 3 years leading medium-sized teams (10-20) in kitchen cleaning (stewarding), with high staff turnover.
